Meet the Baker & Owner Nicole Royster
As a retired Army wife who proudly served alongside my husband for 20 years — and joyfully prepared countless meals and desserts for my husband and sons — I felt a pull to explore my creative side through baking in 2009. I initially began with gourmet cupcakes, but soon realized that shipping them to family & friends risked compromising their quality. Wanting to share my treats with loved ones near and far, I turned to cookies instead.
What began thirteen years ago as a holiday hobby quickly blossomed into something far more meaningful to me. I even took time to develop all of my recipes. Warmly praised by my family and friends, I knew it was finally time to take the next step.
In July of this year, I transformed my passion into a business — and my home kitchen into a licensed micro bakery. Thus, a brand was born: built on premium cookies, thoughtful design, and an experience that delights both the eyes and the palate.
From the start, I was committed to sourcing only the finest ingredients. One non-negotiable was Belgian chocolate — a flavor I fell in love with when we were stationed in The Netherlands, and one I knew would elevate each bite.
Every element of Nicky's Cookies, from packaging to product, has been intentionally crafted with care. This is more than just a cookie — it’s a moment, a memory, a gift… and a heartfelt expression of who I am.
